Wheat-based Alcohol Heads and Tails
Wheat-based alcohol heads and tails cuts are limpid liquids with high alcohol percentage (90% min.). It is made up of ethanol mixed with by-products of alcohol fermentation, different from ethanol, such as esters, aldehydes and higher alcohols (high-boiling substances, including amyl alcohol, propanol and butanol).
Characteristics
It is a clear liquid with particular organoleptic characteristics.
How is it obtained
It is extracted from “mother” cider through a fractional distillation process, in which low-boiling substances (heads: methyl alcohol, aldehydes, esters, etc.) and high-boiling substances (tails: propanol, butanol, amyl alcohols) resulting from the fractional distillation process are separated.
